This was a really delicious dinner that a southern belle blogger put together and posted, and i wanted to share with my blogging friends cause it looks really good.
Mexican Chicken (serves 1)
•1 chicken breast
•Taco Seasoning (I used Food Lion brand because it was the cheapest)
•Panko Breads Crumbs
•Your Favorite Salsa (I used medium – thick and chunky)
•Cheese (I used a Mexican blend)
1. Mix together taco seasoning and bread crumbs to taste. Don’t worry, you can’t give it too much flavor. Preheat oven to 375*F.
2. Bread chicken breast in panko/taco mixture, then place in a cooking dish. Cook 25-30 minutes, or until the chicken is no longer pink in the middle (This is why my picture turned out bad. I cut the chicken almost in half to check the center).
3. Spoon a few tablespoons of salsa on top and add cheese.
4. Place in oven until cheese has melted.

•1/2 cup instant rice
•1 cup water
•1 can Mexi-Corn (drained)
•4 TBSP Taco Seasoning
•Cheese
1. Cook rice like normal. When it’s done, toss in the mexi-corn.
2. Stir in taco seasoning and cheese.
3. Serve

skate comp got rained out....
Well sad news for all the skaters in the skate comp today, it rained. so maybe next time....But now we are all at Barnes and Nobles in the mall. So we can blog about our great adventures in the barnes and nobles store that has so much excitement to my kids and me and my sister lol. But seriously we all really love the store. So many books and so much comfortability.
Today is the skate competition today
Well today is my 15 yr olds skate comp day at the cape girardeau mo skate park. its a competition to allow the skaters to get a chance to be sponsored and win boards, prizes, and money. so he is so nervous and excited. It starts at 12 and we are getting ready to go and watch it. I hope he gets spoonsered and I hope he doesnt get hurt like one time when he did. AAAAAHHHHHH... lol. Well later on this evening when my half of dozen are all calm and not going nuts.....

Long time no see
Well hello blog, and to all that has viewed it. Sorry I haven't been on in so long, I have been going through some heridous things that life just threw at me all at once. Still a single mom of 6 kids and still a college student and work. How I do all this some ask me, well lets just say, its beyond me myself. I guess god just gives so much patience and help to us to get us where we need to be without going insane. I wonder sometimes though, if I will ever find that special someone to complete one day my life and my kids life. But you have to be so careful nowdays of who you meet to date or further a relationship with. I was seeing a guy and he had 4 kids, 3 girls and one boy. But his lifestyle as a parent and so on didn't add up to what i wanted for me and my kids in life. Any man that is fixing to turn 39 soon and still lives with his parents and his kids live there with him tells me he can't even stand on his own 2 feet. So i will leave the other details of this semi relationship censored, for various reasons lol. But i would love to hear about your weird past relationships that were awkward or just too much drama.....I want that special someone to be stable and on his own 2 feet. Has to love kids and knows how to treat a woman. So until that fantasy becomes a reality, i will just focus on me and my kids right now. Life does go on, good or bad, and one day god will send that someone you are waiting for towards your path. Can't wait lol, I do get lonely sometimes.
